Kendall County, Texas

Duane's take

Here's my telling of what the official marker has to say about the Fabra Smokehouse, out in Kendall County. Now settle in, because this one's about stone, smoke, and the kind of stubbornness that runs in a family's blood. Julius Fabra was born in Germany in 1827, and somewhere along the way he decided that Texas sounded like a fine idea.

He made it to this area in 1854, and he didn't exactly arrive with a plan. He hauled freight first. Bumping down rough roads, moving other people's goods, learning the land and the farms and the folks who worked them.

And then, the way a man does when he's been paying close attention, he saw an opportunity. He opened a meat market to serve those same local farms. Now Julius had a son named Ludwig, born in 1858, and when Ludwig was eighteen years old he didn't just join the business, he built something.

Right there in 1887, Ludwig put up a smokehouse for the store. Native limestone, the kind this Hill Country has been growing in its bones since long before anyone arrived to quarry it. One story, solid, simple, and built to last.

And last it did. By 1904, they added a second story on top of that original limestone foundation. The business kept going, the smoke kept rising, and then Ludwig passed, born in 1858 and gone by 1929.

His son Henry took over the market and ran it until he retired in 1962. Three generations. Julius hauling freight and selling meat.

Ludwig building the stone heart of the operation. Henry carrying it to the finish line. Everything else from those years, the counters and the scales and whatever else made up the Fabra family business, is gone now.

But that smokehouse is still standing. Limestone has a long memory, and it turns out, so does smoke.

What the marker says

A native of Germany, Julius Fabra (1827-1910) migrated to this area in 1854. After working as a freight hauler, he opened a meat market to serve the local farms. His son Ludwig (1858-1929) joined the business at the age of eighteen and constructed this smokehouse for the store in 1887. Originally a one-story structure, it was built of native limestone. A second story was added in 1904. Following Ludwig's death, his son Henry operated the market until he retired in 1962. The smokehouse is all that remains of the Fabra family business which spanned three generations. Recorded Texas Historic Landmark - 1980
